Menu Monday

I've always tried to plan the menu for the week, even when I was single, basically because I don't like going to the grocery store and wanted to make the least amount of trips there as possible. I even have a menu board in my kitchen that, sadly, has remained blank lately as I jot down meal ideas in my planner. These days, I have to take into consideration Michael & Addison's palate as well as my own, and some weeks, it's hard to find any meals that sound good. I try to cook fairly healthy but some weeks, all I'm looking for is quick and easy, and hopefully tasty. The beginning of this past week was a huge bust with every meal I cooked, so I sat down on Wednesday & looked through quite a few recipe blogs to get some ideas. I found Rachel's menu Monday link up with some great menu ideas and thought it would be fun to link up each week with what we ate the week before & what's on the menu for next week. 



Like I mentioned, last week didn't start out so great. By Wednesday evening, with my third dinner fail looming, I sat down to quickly revamp the menu for the rest of the week. I am happy to say that things quickly improved. 
What we ate:

Easy Italian Pasta Bake with green beans


Grilled Chili Sauce Chicken with roasted green beans, red potatoes, and grilled romaine hearts


Homemade sausage and pepperoni pizza

 
We also had chicken enchiladas with Mexican rice and roasted zucchini.

  2. We do this same thing! I hate countless trips to the grocery store. Ugh. We just has pulled BBQ sandwiches last night. Yummy!
