Menu Monday

Happy Monday!

I'm linking up with Rachel at In No Simple Language again this week for Menu Monday.

Last week, we did fairly well with sticking to our menu for the week. I didn't remember to snap pictures of every meal, but I managed a few.

I made chicken & sausage gumbo on Monday using the Zatarain's mix for the base since it was a weeknight without a lot of time. It really is convenient to keep a couple of boxes in the pantry for days when we are craving some comfort food but don't have the extra time or energy to devote to standing over the stove. And since I'm a huge fan of okra, I couldn't resist throwing some in. I could seriously eat okra seven days a week!

On Valentine's day, it's become sort of a tradition for Michael and I to meet up for lunch instead of going out to dinner. This year, we met at a local sushi restaurant. It was so yummy, but after all of that food, I was ready for nap in the afternoon.

And this wasn't on the menu last week, but yesterday, while at a wedding shower for my future cousin-in-law, Michael slaved over the stove to make old fashion spaghetti and meatballs. The sauce simmered for three hours, and the meatballs were a mix of ground beef and Italian sausage. This recipe was delicious and reminded me so much of my late grandfather's recipe he used to make for big Sunday family dinners. I had to exercise a lot of restraint not to go back for seconds. What's even better is that we have quite a bit leftover to freeze for future meals.

And on the menu for this week:

What's on your menu for this week?

  3. I am being completely honest when I say I have never cooked a meal. My husband is an excellent cook so he even likes to do it. However, your menu looks great!
